ibi WINES - VITA ($55)

The aroma starts with rose stems, fruit tea and blue plums. The first sip is a dynamic combo of pepper, leather and sweet cherry. It finishes with barnyard whiffs and heirloom tomatoes. Tannins aren't over the top, but firmly present. The acid is soft and serene, with a gentle sparkle to pull it all together. 11% 750ml

This foeder fermented saison is the result of a unique blending regimen, before being gently dry-hopped and bottle conditioned. Labour intensive in process, but rewarding in result. A complex, layered beer with perfect champagne-like carbonation to carry the lemon meringue aromatics, bright hop character, and rich brett notes. Refined and balanced acidity with lots of complimentary citrus. 6.0% 500ml Bottle

Complex aromas of stone fruits that mingle with the earthy funky qualities found from barrel fermentation. Expect subtle acidity, a lengthy lingering finish, and the ability to develop further in bottle over time. 6.1% 500ml

BELLWOODS - VINES NO.5 ($28)

WILD FERMENTED ALE INOCULATED WITH GAMAY SKINS 

No. 5 is wort that was inoculated with post-fermentation gamay skins (from Rosewood Estates Winery), then barrel aged, and blended to balance flavours. It's lightly fruity with firm acidity. 7.3% 500ml

A wild ale blend made in solera- style . This is a spritzy beer with layers of acidity, refined brett character, stone fruit flavour, and soft minerality. This variation is conditioned on fresh yellow plums from Niagara. 7.7% 500ml
